Milk Keiffer
Milk keiffer is one of the easiest health foods to make all you need is:
1 heaping teaspoon of milk keiffer grains
8 oz of milk of your choice (dairy)
How to make:
put keiffer grains in a glass jar with enough room for 8oz or more of diary milk. Pour milk over grains. cover with a loose fitting lid or cloth and rubber band. Let sit at room temperature until it thickens, anywhere from 8-48 hours depending on the temperature of the space. Once thickened use a nylon strainer and a non- metal utensil to sieve liquid into a storage jar or right into your bowl or glass!
Add grains into clean jar and add fresh milk to your grains to refeed.
Refrigerate the finished keiffer until ready to use stores up to two weeks. Add fruit and sweetener of your choice and blend it into a yummy drink or make a creamy dressing with it.
Hint: the long it sits the more tangy and sour it will taste, also the sugar content will decrease the longer it ferments, great if youre watching your sugar intake.
*after a few batches you might have more grains, you can make bigger batches with more grains, toss them or freeze them for use later.
Need to take a break? Using a glass jar with a well fitting lid, add fresh milk to the grains put the lid on and refrigerate immediately, this will slow down the fermentation process. re-feed every two weeks. Want to take a longer break? strain the grains and place in a plastic bag, freeze for up to one year. upon re using the grains, they make take a few batches of milk to “wake up” if they don’t wake up, toss them and start with new grains.
